Boskoop apple cooked down in caramel, a salted butter caramel centre that stays runny, and a roasted buckwheat Breton shortbread that crunches under the spoon.
The pairing
Serve with Bahari, our hoppy amber ale: its caramel malts embrace the tarte tatin apple, and the roasted buckwheat links up with the beer's grain.
The Boskoop apples are diced and cooked down in a dry caramel with lightly salted butter: they keep their bite rather than melting into a purée. At the centre, a salted butter caramel stays runny right up to serving. The Breton shortbread made with roasted buckwheat flour brings the cereal note that links it to the beer, and a light Bourbon vanilla mousse envelops the whole. Finished with a caramel velvet coating.
